Cucumbers make good candidates for heathy snacks and base ingredients for salads. As a mild-tasting refresher it can be the straight man next to almost any more flamboyant ingredient. I’ve come to appreciate it as a mid-afternoon snack to dip into home-made mixes out of mayonaise and spicy sauces.
Today’s recipe covers another favourite, however, a vegetarian lactose-free, gluten-free crowdpleaser you can bring to any potluck.
Cucumber sandwiches
- White glutenfree bread (pick a tasty one)
- Vegan cream cheese (yes, at the supermarket)
- Cucumbers, washed and sliced 1/4 inch (2/3 cm)
Slather the lower slice with cream cheese. Put the cucumber slices on like puzzle pieces. Put top slice on. Slice diagonally. Pack in container or serve.
